Ingredients:
• 24 Oreo cookies
• 1/4 cup (56g) unsalted butter, melted
• 16 oz (450g) cream cheese, softened
• 1/2 cup (100g) granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup (175g) chocolate chips
Directions:
. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
. Crush the Oreo cookies in a food processor until fine crumbs form. Combine the crumbs with melted butter and press the mixture firmly into the bottom of the prepared pan.
. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
. Gently fold in the chocolate chips until evenly distributed.
. Pour the cheesecake mixture over the Oreo crust and spread it out evenly.
. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
. Allow the bars to cool completely in the pan, then refrigerate for at least 2 hours before slicing into squares.
