Ginger Cookies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 tablespoons finely grated fresh ginger
  • Granulated sugar (for rolling)

Instructions:

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, ground ginger, baking soda, cinnamon, cloves, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy.
  4. Beat in the egg, molasses, and fresh ginger until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll the dough into small balls (about 1 1/2 tablespoons of dough each).
  7. Roll the balls in granulated sugar until they are completely coated.
  8. Place the balls onto the lined baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are firm and the cookies have cracked on top.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
